Their primary goal is to maintain the beans’ freshness by preventing exposure to air, light, and moisture. Traditionally, burlap sacks were used to store unroasted beans in bulk. A reminder – fresh roasted coffee’s rule of 3’s. Ground coffee – 3 minutes, roasted coffee – 3 weeks, raw coffee – 3 years.The Rule goes like this: Green coffee lasts about 15 months before it goes stale. Roasted coffee lasts about 15 days before it goes stale. Ground coffee lasts about 15 minutes before it goes stale.Oxygen, moisture, and light are the agents that most quickly make roasted coffee age. A factory-sealed bag will keep coffee fresh for almost a year. After the bag is opened, unless it is tightly resealed using the bag’s metal tie, oxygen and moisture get in, and the aging process begins.Coffee bags might claim to give you all the flavour and freshness of just-roasted coffee, but they simply can’t. Why? Because the grounds they contain were roasted months, not days ago, and will probably spend another four or five months sitting in your kitchen cupboard.
